OPTIMAL PERIOD FOR CONTACTING
– White wine:
From the barreling for alcoholic fermentation for a well-integrated woody profile and respect for the fruit profile.
– Red wine:
From the barreling for better integration of the woody aromatic profile and the tannic structure.
RECOMMENDED BREEDING TEMPERATURE
Greater than or equal to 15°C with rigorous monitoring of microbiological conditions.
FACILITY
To be inserted through the bung hole after removing the soil from the barrel. (volume of a set of sticks: approximately 0.6 liters)
RECOMMENDED CONTACT TIME
4 months minimum to pilot at tasting.
Practical Use Nektar Sticks American Oak
On ripe and concentrated Chardonnay vinified in 3-wine barrels: 3 sets of French oak Nektar Sticks (1 set extended light toast, 1 set medium toast, 1 set medium toast plus) from the moment of barreling at the start of alcoholic fermentation.
On a rich and concentrated Merlot-Cabernet blend aged in 3-wine barrels: 4 sets of French oak Nektar Sticks (2 sets medium toast, 2 sets medium plus toast) upon filling.
